Beet And Feta Caramelized Onion Burgers Recipe
For Caramelized Onion
2tablespoons of vegetable oil
1large sweet onionthinly sliced and 1scallionsliced
2ounces55-gram cheese, crumbled
For the Burgers
3tablespoons of vegetable oil
1cup and 120-gram wheat gluten
2teaspoons ofground cumin and garlic powder
1teaspoon of Salt
3tablespoons of vegetarian steak sauce
1/2cup 225 grams of cooked pearl couscous, cooled
220 grams of peeled and grated beets
Half a teaspoon of freshly ground pepper
Making Caramelized Onion
In an iron pan, heat the oil and onion over medium-low heat. Stir in the oil to cover each onion sliver. Add the salt, cover, and steam for 5 minutes, or until the onion is smooth but not colored.
Uncover and continue to steam, stirring regularly, for 15 to 20 minutes more, or until a golden brown color appears. Deglaze the pan with the Bourbon.
Remove from the heat and set aside to cool. Add the scallions and cheese when the onion is no longer hot to the touch. Set aside after stirring.
In a large mixing bowl, blend the beet, couscous, steak sauce, cumin, garlic powder, salt, and pepper. To combine and spread all of the spices, mix well. Mix in the wheat gluten. Blend the gluten into the mixture with your hands.
When the gluten is moist, it starts to set up and become sticky. Mix for 1 to 2 minutes with hands to coat the items in the gluten. Form the ingredients into a ball, then split it into equal sections. Form into 3/4 inches thick pattie.
Heat 2 tablespoons of the oil in a large iron pan over medium heat. Working in sets if required, burn the burgers on one side for 7 minutes, or until deep golden brown and keeping together.
If the pan seems to be dry, add the remaining oil. Cook for 5 to 7 minutes more, or until the burgers are cooked through. Set the feta caramelized onions on top of each burger.
